Claypot Chicken Rice

Ingredients:

Chicken Marinade

Method:

  1. Slice the chicken breast pretty wide
  2. Marinade for 15 minutes to overnight
  3. Heat up claypot on high fire
  4. Add in pre-soaked rice
  5. 2 cups of water and 10g of chicken stock powder
  6. Cook for 5 minutes lid off
  7. Add the chicken, lid on and cook for another 3 minutes
  8. Remove the lid and add mushrooms, pak Choi and fried shallots
  9. Cook for another 3-5 minutes or until the sound of the rice begins to crackle
  10. Spoon over the sauce and mix
  11. Cover the lid and let it rest off fire for 3-5 minutes
  12. Garnish with spring onions, mix and servea
