Claypot Chicken Rice
Ingredients:
Chicken Marinade
- 4 nos - Chicken breast
- 1 tbs - Light soy sauce
- 1 tbs - Dark soy sauce
- 1 tsp - Oyster sauce
- 1 tsp - Sesame oil
- 1 tsp - Corn starch
- 1 thumb - Ginger
- White pepper powder to taste
Sauce
- 1 tbs - Light soy sauce
- 2 tbs - Dark soy sauce
- 1tbs - Oyster sauce
- ½ tbs - Sesame oil
- 1 tbs - Chicken stock powder
- Sugar to taste
- 1 cup - Rice
- 200g - Shiitake mushrooms
- Fried shallots
- 100g - Pak Choi
- 30g Spring onion
- 1 small pieces and chopped fine of dried chilied
Method:
- Slice the chicken breast pretty wide
- Marinade for 15 minutes to overnight
- Heat up claypot on high fire
- Add in pre-soaked rice
- 2 cups of water and 10g of chicken stock powder
- Cook for 5 minutes lid off
- Add the chicken, lid on and cook for another 3 minutes
- Remove the lid and add mushrooms, pak Choi and fried shallots
- Cook for another 3-5 minutes or until the sound of the rice begins to crackle
- Spoon over the sauce and mix
- Cover the lid and let it rest off fire for 3-5 minutes
- Garnish with spring onions, mix and servea
